It's from the Oregonian Online.  check it out!&lt;br /&gt;&lt;br /&gt;http://www.oregonlive.com/politics/index.ssf/2010/04/too_much_salt_report_urges_fda.html&lt;br /&gt;&lt;br /&gt;Here's the text from the article.  &lt;br /&gt;&lt;br /&gt;Too much salt: Report urges FDA to force rollback&lt;br /&gt;By The Associated Press&lt;br /&gt;April 20, 2010, 2:40PM&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Source: Company Web sites&lt;br /&gt;WASHINGTON -- Too much salt is hidden in Americans' food, and regulators plan to work with manufacturers to cut back -- but the government isn't ready to go along with a major new recommendation that it order a decrease.&lt;br /&gt;&lt;br /&gt;"We believe we can achieve some substantial voluntary reductions," Food and Drug Administration Commissioner Dr. Margaret Hamburg told The Associated Press on Tuesday. "We are shaping a strategy, and that strategy involves working in partnership."&lt;br /&gt;&lt;br /&gt;Archive&lt;br /&gt;It's possible to cut down on your sodium intake, and here's how&lt;br /&gt;Don't expect soups, pizzas and breakfast cereals -- yes, they contain added sodium, too -- to taste different any time soon. The FDA's plans are still being formulated, but the idea is for gradual change so consumer taste buds can adjust, as well as industry recipes and production methods.&lt;br /&gt;&lt;br /&gt;Americans eat about 1 1/2 teaspoons of salt daily, more than double what they need for good health and enough to increase the risk of high blood pressure, strokes and other problems. Most of that sodium doesn't come from the table salt shaker; it's hidden inside common processed foods and restaurant meals.&lt;br /&gt;&lt;br /&gt;On Tuesday, the prestigious Institute of Medicine said the food industry has made little progress in voluntarily reducing sodium. The advisers urged the FDA to set maximum sodium levels for different foods in a stepwise rollback, so that eventually average consumption would drop by about half a teaspoon.&lt;br /&gt;&lt;br /&gt;"This needs to be a mandatory standard," said Dr. Jane E. Henney of the University of Cincinnati, a former FDA commissioner who headed the IOM's study. Because salt is so "ubiquitous, having one or two in the industry make strong attempts at this doesn't give us that even playing field over time. It's not sustainable."&lt;br /&gt;&lt;br /&gt;The IOM report doesn't set a deadline, but says it will take years to phase in the changes for consumers who are used to the taste of a high-salt diet.&lt;br /&gt;&lt;br /&gt;One in three U.S. adults has high blood pressure, which in turn is a leading cause of heart attacks, strokes and kidney failure. And while being overweight and inactive raises blood pressure, too much salt is a big culprit as well. The American Medical Association has said 150,000 lives a year could be saved by cutting in half sodium levels in processed and restaurant food.&lt;br /&gt;&lt;br /&gt;"This is crying out for a change that's long overdue," added Sen. Tom Harkin, D-Iowa, who helped spur the IOM report and plans hearings on next steps.&lt;br /&gt;&lt;br /&gt;Hamburg told the AP that while her agency is reviewing the recommendations, it isn't currently writing new regulations -- and that setting legal limits on how much sodium can be added to different foods would take longer than collaborating with food makers on salt-cutting goals.&lt;br /&gt;&lt;br /&gt;"We would be working with them to establish targets," she said. "We absolutely see reducing salt in the diets of Americans as a very important public health priority. ... You'll see us sitting down with key industry partners and starting to define a roadmap."&lt;br /&gt;&lt;br /&gt;Government guidelines set 2,300 milligrams of sodium as the maximum daily intake -- the amount above which health problems can appear. The IOM says people need just 1,500 mg a day for good health, less if they're over 50. Yet average consumption is more than 3,400 mg.&lt;br /&gt;&lt;br /&gt;The food industry has long argued that it didn't have tasty ways to replace sodium if it made deep cuts. But brand-to-brand differences in the same foods suggest that's not so, and some food giants are leading the way in sodium reduction.&lt;br /&gt;&lt;br /&gt;ConAgra Foods Inc. -- makers of products including Chef Boyardee canned pasta, Healthy Choice frozen dinners and Hunt's tomato sauces -- last fall pledged a 20 percent reduction in its food lines by 2015. The Omaha, Neb.-based company says its cuts would eliminate a stunning 10 million pounds of salt from the U.S. diet.&lt;br /&gt;&lt;br /&gt;The Grocery Manufacturers Association said Tuesday that its companies look forward to working with FDA "to develop a national sodium reduction strategy that will help consumers."&lt;br /&gt;&lt;br /&gt;New York City just began a closely watched program to reduce salt levels in restaurant and store-bought foods, with the goal of cutting salt levels by a quarter over five years. The health department's guidelines are voluntary, setting targets for different kinds of foods.&lt;br /&gt;&lt;br /&gt;Leaving it to consumers to know how much sodium they eat and cut back on their own doesn't work, the IOM report said.&lt;br /&gt;&lt;br /&gt;"Phasing in a population-wide decrease in salt intake is probably the most practical way to go," agreed Tufts University nutrition scientist Alice Lichtenstein, an American Heart Association spokeswoman. "If they become mandatory, then I think we will see change."&lt;br /&gt;&lt;br /&gt;-- The Associated Press&lt;br /&gt;&lt;br /&gt;Examples of sodium levels in some foods&lt;br /&gt;Sodium levels can be high in packaged foods, and even higher in some restaurant meals. But some of his favorites, like purslane, guava and goji berries, aren’t always available at regular grocery stores. I asked Dr. Bowden, author of “The 150 Healthiest Foods on Earth,” to update his list with some favorite foods that are easy to find but don’t always find their way into our shopping carts. Here’s his advice.&lt;br /&gt;&lt;br /&gt;   1. Beets: Think of beets as red spinach, Dr. Bowden said, because they are a rich source of folate as well as natural red pigments that may be cancer fighters.&lt;br /&gt;      How to eat: Fresh, raw and grated to make a salad. Heating decreases the antioxidant power.&lt;br /&gt;   2. Cabbage: Loaded with nutrients like sulforaphane, a chemical said to boost cancer-fighting enzymes.&lt;br /&gt;      How to eat: Asian-style slaw or as a crunchy topping on burgers and sandwiches.&lt;br /&gt;   3. Swiss chard: A leafy green vegetable packed with carotenoids that protect aging eyes.&lt;br /&gt;      How to eat it: Chop and saute in olive oil.&lt;br /&gt;   4. Cinnamon: May help control blood sugar and cholesterol.&lt;br /&gt;      How to eat it: Sprinkle on coffee or oatmeal.&lt;br /&gt;   5. Pomegranate juice: Appears to lower blood pressure and loaded with antioxidants.&lt;br /&gt;      How to eat: Just drink it.&lt;br /&gt;   6. Dried plums: Okay, so they are really prunes, but they are packed with antioxidants.&lt;br /&gt;      How to eat: Wrapped in prosciutto and baked.&lt;br /&gt;   7. Pumpkin seeds: The most nutritious part of the pumpkin and packed with magnesium; high levels of the mineral are associated with lower risk for early death.&lt;br /&gt;      How to eat: Roasted as a snack, or sprinkled on salad.&lt;br /&gt;   8. Sardines: Dr. Bowden calls them “health food in a can.” They are high in omega-3’s, contain virtually no mercury and are loaded with calcium. They also contain iron, magnesium, phosphorus, potassium, zinc, copper and manganese as well as a full complement of B vitamins.&lt;br /&gt;      How to eat: Choose sardines packed in olive or sardine oil. Eat plain, mixed with salad, on toast, or mashed with dijon mustard and onions as a spread.&lt;br /&gt;   9. Turmeric: The “superstar of spices,” it may have anti-inflammatory and anti-cancer properties.&lt;br /&gt;      How to eat: Mix with scrambled eggs or in any vegetable dish.&lt;br /&gt;  10. Frozen blueberries: Even though freezing can degrade some of the nutrients in fruits and vegetables, frozen blueberries are available year-round and don’t spoil; associated with better memory in animal studies.&lt;br /&gt;      How to eat: Blended with yogurt or chocolate soy milk and sprinkled with crushed almonds.&lt;br /&gt;  11. Canned pumpkin: A low-calorie vegetable that is high in fiber and immune-stimulating vitamin A; fills you up on very few calories.&lt;br /&gt;      How to eat: Mix with a little butter, cinnamon and nutmeg.&lt;br /&gt;&lt;br /&gt;You can find more details and recipes on the Men’s Health Web site, which published the original version of the list last year.&lt;br /&gt;&lt;br /&gt;In my own house, I only have two of these items — pumpkin seeds, which I often roast and put on salads, and frozen blueberries, which I mix with milk, yogurt and other fruits for morning smoothies. Even the most efficient health care system that the administration could hope to devise would still confront a rising tide of chronic disease linked to diet.&lt;br /&gt;&lt;br /&gt;That's why our success in bringing health care costs under control ultimately depends on whether Washington can summon the political will to take on and reform a second, even more powerful industry: the food industry.&lt;br /&gt;&lt;br /&gt;According to the federal Centers for Disease Control and Prevention, three-quarters of health care spending now goes to treat "preventable chronic diseases." Not all of these diseases are linked to diet -- there's smoking, for instance -- but many, if not most, of them are.&lt;br /&gt;&lt;br /&gt;Annually we're spending $147 billion to treat obesity, $116 billion to treat diabetes and hundreds of billions more to treat cardiovascular disease and the many types of cancer that have been linked to the so-called Western diet. One recent study estimated that 30 percent of the increase in health care spending during the past 20 years could be attributed to the soaring rate of obesity, a condition that now accounts for nearly one-tenth of all spending on health care.&lt;br /&gt;&lt;br /&gt;The American way of eating has become the elephant in the room in the debate about health care. The president has made a few notable allusions to it, and, by planting her vegetable garden on the South Lawn, Michelle Obama has tried to focus our attention on it. Just last month, the president talked about putting a farmers market in front of the White House and building new distribution networks to connect local farmers to public schools so that student lunches might offer more fresh produce and fewer Tater Tots. He's even floated the idea of taxing soda.&lt;br /&gt;&lt;br /&gt;But so far, reform of the food system has not figured in the national conversation about health care reform. So the government is poised to go on encouraging America's fast-food diet with its farm policies even as it takes on added responsibilities for covering the medical costs of that diet. To put it more bluntly, the government is putting itself in the uncomfortable position of subsidizing both the costs of treating Type 2 diabetes and the consumption of high-fructose corn syrup.&lt;br /&gt;&lt;br /&gt;Why the disconnect? Probably because reforming the food system is politically even more difficult than reforming the health care system. At least in the health care battle, the administration can count some powerful corporate interests on its side -- like the large segment of the Fortune 500 that has concluded the current system is unsustainable.&lt;br /&gt;&lt;br /&gt;That is hardly the case when it comes to challenging agribusiness. Cheap food is going to be popular as long as the social and environmental costs of that food are charged to the future. Lots of money is to be made selling fast food and then treating the diseases that fast food causes. One of the leading products of the American food industry has become patients for the American health care industry.&lt;br /&gt;&lt;br /&gt;The market for prescription drugs and medical devices to manage Type 2 diabetes, which the CDC estimates will afflict one in three Americans born after 2000, is one of the brighter spots in the American economy. As things stand, the health care industry finds it more profitable to treat chronic diseases than to prevent them. There's more money in amputating the limbs of diabetics than in counseling them on diet and exercise.&lt;br /&gt;&lt;br /&gt;As for the insurers, you would think preventing chronic diseases would be good business, but, at least under the current rules, it's much better business simply to keep patients at risk for chronic disease out of your pool of customers, whether through lifetime caps on coverage or rules against pre-existing conditions or by figuring out ways to toss patients overboard when they become ill.&lt;br /&gt;&lt;br /&gt;But these rules may well be about to change -- and, when it comes to reforming the American diet and food system, that step alone could be a game changer. Even under the weaker versions of health care reform now on offer, health insurers would be required to take everyone at the same rates, provide a standard level of coverage and keep people on their rolls regardless of their health. Terms like "pre-existing conditions" and "underwriting" would vanish from the health insurance rulebook -- and, when they do, the relationship between the health insurance industry and the food industry will undergo a sea change.&lt;br /&gt;&lt;br /&gt;The moment these new rules take effect, health insurance companies will promptly discover they have a powerful interest in reducing rates of obesity and chronic diseases linked to diet. A patient with Type 2 diabetes incurs additional health care costs of more than $6,600 a year; over a lifetime that can come to more than $400,000. Insurers will quickly figure out that every case of Type 2 diabetes they can prevent adds $400,000 to their bottom line. Suddenly, every can of soda or a Happy Meal or chicken nugget on a school lunch menu will look like a threat to future profits.&lt;br /&gt;&lt;br /&gt;When health insurers can no longer evade much of the cost of treating the collateral damage of the American diet, the movement to reform the food system -- everything from farm policy to food marketing and school lunches -- will acquire a powerful and wealthy ally, something it hasn't really ever had.&lt;br /&gt;&lt;br /&gt;Agribusiness dominates the agriculture committees of Congress and has swatted away most efforts at reform. But what happens when the health insurance industry realizes that our system of farm subsidies makes junk food cheap, and fresh produce dear, and thus contributes to obesity and Type 2 diabetes? It will promptly get involved in the fight about the farm bill -- which is to say, the industry will begin buying seats on those agriculture committees and demanding that the next bill be written with the interests of the public health more firmly in mind.&lt;br /&gt;&lt;br /&gt;In the same way much of the health insurance industry threw its weight behind the campaign against smoking, we can expect it to support, and perhaps even help pay for, public education efforts such as New York City's bold new ad campaign against drinking soda. At the moment, a federal campaign to discourage the consumption of sweetened soft drinks is a political nonstarter, but few things could do more to slow the rise of Type 2 diabetes among adolescents than to reduce their soda consumption, which represents a full 15percent of their caloric intake.&lt;br /&gt;&lt;br /&gt;That's why it's easy to imagine the industry throwing its weight behind a soda tax. School lunch reform would become its cause, too, and in time the industry would come to see that the development of regional food systems, which make fresh produce more available and reduce dependence on heavily processed food from far away, could help prevent chronic disease and reduce their costs.&lt;br /&gt;&lt;br /&gt;Recently a team of designers from the Massachusetts Institute of Technology and Columbia University was asked by the foundation of the insurer UnitedHealthcare to develop an innovative systems approach to tackling childhood obesity in the U.S. Their conclusion surprised the designers as much as their sponsor: They determined that promoting the concept of a "foodshed" -- a diversified, regional food economy -- could be the key to improving the American diet.&lt;br /&gt;&lt;br /&gt;All of which suggests that passing a health care reform bill, no matter how ambitious, is only the first step in solving our health care crisis. It results in excessively high serum glucose levels.&lt;br /&gt;&lt;br /&gt;Type Two, insulin resistance or “adult onset diabetes”: an acquired disease in which the pancreas still produces insulin, but unhealthy and high levels of glucose remains in the blood stream, unable to be transported to individual cells. This, the most common form of diabetes has a strong relationship to diet and life style.&lt;br /&gt;&lt;br /&gt;Serum or blood glucose levels: a snapshot measurement of the level of glucose in the blood at a given time. Diabetics are encouraged to do morning glucose tests (monitoring) to assure that diet or medications maintains a level in the normal range. This range is typically from 70-110 as a mg measurement in a cubic centimeter of blood. &lt;br /&gt;&lt;br /&gt;HgA1c, hemoglobin A1c or glycocylated hemoglobin: a blood test which measures saturation of red blood cell walls with glycogen. It indicates whether blood sugar has been well regulated over the past 3 or more weeks. &lt;br /&gt;&lt;br /&gt;Primary health risks of diabetes: Uncontrolled blood sugar, sustained at a high level is an inflammatory condition that damages the cardiovascular system and through impaired circulation often leads to nerve damage and neuropathies. This may lead to high blood pressure, heart attacks, neuropathies that require amputation and eventually kidney failure.&lt;br /&gt;&lt;br /&gt;Simple Nutritional Considerations: It is important that people with diabetes limit foods that have a high sugar content or a high glycemic index. White sugar and high fructose corn syrup are two of the most harmful foods for the diabetic. Honey, maple syrup, white refined flour, white rice, pasteurized fruit juices and other foods that contain sugar or corn syrup (like soda pop, alcohol) are all to be limited in the diabetic diet. &lt;br /&gt;&lt;br /&gt;The ADA (American Diabetes Association) diet seeks to limit simple sugars but is primarily concerned with counting carbohydrate levels (sugar) to make certain that medical control with insulin or hypoglycemic medicines is sustained. Dr. Neil Bernard, an endocrinologist from George Washington University advocates a vegan diet and has research that shows a much better long term outcome for diabetics than that achieved by the ADA recommendations. &lt;br /&gt;&lt;br /&gt;Whole foods, use of raw vegetables and fruits and limited simple sugars are the simple guidelines for controlling diabetes. Some of you know, but we’ve had one of our pastors, my good friend, recently  pass away from diabetes. Probably not every once in a while, but&lt;br /&gt;studies consistently prove out that you shouldn't make it a staple of your&lt;br /&gt;diet plan if you want to be healthy. For those following low carb diets, it&lt;br /&gt;might be best to mix it up with some leaner meats as well. One of the main&lt;br /&gt;problems is all that smoking and curing of the bacon before it ever reaches&lt;br /&gt;your grocery store shelf. So, the rule of thumb here is to eat bacon in&lt;br /&gt;moderation.&lt;br /&gt;&lt;br /&gt;Canned Chicken Soup&lt;br /&gt;The main problem with canned versions of this classic recipe is the sodium&lt;br /&gt;content. One cup of canned chicken noodle soup can give you a whalloping&lt;br /&gt;1000 milligrams of salt. Yikes! You're much better off cooking up your&lt;br /&gt;own version of this soup. You can always freeze in single serve portions, if&lt;br /&gt;you like the convenience of ready-made soup. You can find some great&lt;br /&gt;recipes for homemade soup at CountryLiving.com.&lt;br /&gt;&lt;br /&gt;Cheese Cake&lt;br /&gt;Cheesecake makes the list, more than likely because of those huge servings&lt;br /&gt;of cheesecake doled out by restaurants like the yummy, but oh so sinful&lt;br /&gt;Cheesecake Factory. Again, this is one of those foods that can be made&lt;br /&gt;healthier at home with your own recipe. Any store-bought cheesecake is&lt;br /&gt;likely to be filled to the brim with fat and sugar. Also, really watch portions&lt;br /&gt;on this food.&lt;br /&gt;&lt;br /&gt;French Fries&lt;br /&gt;It's probably no surprise to anyone that French fries are one of the worst&lt;br /&gt;foods you can eat. Yet, they seem to be as much a part of the American diet&lt;br /&gt;as popcorn and apple pie. French fries are often double fried in oils that&lt;br /&gt;contain bad fats that can lead to the production of cholesterol and other&lt;br /&gt;health problems. Again, the solution may be as simple as cooking some&lt;br /&gt;fries up at home. Try sweet potatoes instead of regular fries and bake them&lt;br /&gt;instead of frying. There are many creative things you can do to make your&lt;br /&gt;meals healthier. This is just one idea.&lt;br /&gt;&lt;br /&gt;Fried Chicken&lt;br /&gt;Anything fried is typically fairly bad for you. Even if you pick off the skin,&lt;br /&gt;there may still be oils in the meat itself. Movies such as SuperSize Me have&lt;br /&gt;brought the problem of the unhealthiness of the American diet to the&lt;br /&gt;forefront of everyone's thoughts. While an occasional meal out of fried&lt;br /&gt;chicken isn't likely to harm you, eating little fried chicken nuggets three&lt;br /&gt;times a week, or feeding them to your children, is not the best solution. Try&lt;br /&gt;broiling or grilling chicken breasts instead.&lt;br /&gt;&lt;br /&gt;Hamburgers&lt;br /&gt;Although we love the taste and smell of a grilled burger, fast food&lt;br /&gt;restaurants that serve these beasts often come in the top 10 for worst for&lt;br /&gt;you foods of the year. For example, Carl's Western Bacon Six Dollar&lt;br /&gt;Burger made number one on Spark People's 10 Worst Foods list. Other&lt;br /&gt;burgers that topped other lists? T.G.I. Friday's Cheesy Bacon Cheeseburger&lt;br /&gt;and the Red Robbin Peppercorn Burger.&lt;br /&gt;&lt;br /&gt;Hot Dogs&lt;br /&gt;Once you learn what hot dogs are made from, it may gross you out to the&lt;br /&gt;point where you really don't want to eat these favorite picnic past times any&lt;br /&gt;longer. There are some tips, such as staying with Kosher or higher end, all&lt;br /&gt;beef hot dogs to avoid some of the health issues with the cheaper varieties.&lt;br /&gt;There are many different ways to serve hot dogs and different types and&lt;br /&gt;varieties of dogs. All in all, they are still inexpensive fare when feeding a&lt;br /&gt;large group of people.&lt;br /&gt;&lt;br /&gt;Pizza with Processed Meats&lt;br /&gt;Even though we know that pizzas are rather unhealthy, most of us can't&lt;br /&gt;seem to pass up the opportunity to sink our teeth into that ooey gooey&lt;br /&gt;yumminess. There are some ways to dress up an unhealthy pizza and make&lt;br /&gt;it a bit healthier, so you don't have to feel quite so guilty for choosing to eat&lt;br /&gt;pizza. First, layer on the vegetables. Second, forego the organ meats, which&lt;br /&gt;add calories and fat. Finally, limit how often and how much pizza you eat.&lt;br /&gt;&lt;br /&gt;Pot Pie&lt;br /&gt;Even as a meal, the store bought pot pies are rather high in calories and&lt;br /&gt;sodium and not too filling. Most people eat those little pot pies as more a&lt;br /&gt;snack than a meal and this is where this food can really eat into your&lt;br /&gt;calorie counts for the day. There are frozen pot pies out there with more&lt;br /&gt;than 1000 calories and over 60 grams of fat. In addition, you really aren't&lt;br /&gt;gaining many nutrients from these highly processed meat pies.&lt;br /&gt;&lt;br /&gt;Potato Chips&lt;br /&gt;Most of the potato chips you purchase in the store are downright bad for&lt;br /&gt;you. There is about $30 billion worth of potato chips moved every year.&lt;br /&gt;That is an amazing number of people eating a truly healthy snack. While&lt;br /&gt;eating potato chips may not make you unhealthy in themselves, they can&lt;br /&gt;put you over your daily calorie budget and they provide no nutritional&lt;br /&gt;value, it's still fine to have them occasionally. Obesity is associated with increased risk of illness,&lt;br /&gt;disability, and death.&lt;br /&gt;&lt;br /&gt;Description&lt;br /&gt;Obesity traditionally has been defined as a weight at least 20% above the weight&lt;br /&gt;corresponding to the lowest death rate for individuals of a specific height, gender,&lt;br /&gt;and age (ideal weight). Twenty to forty percent over ideal weight is considered&lt;br /&gt;mildly obese; 40–100% over ideal weight is considered moderately obese; and&lt;br /&gt;100% over ideal weight is considered severely, or morbidly, obese. More recent&lt;br /&gt;guidelines for obesity use a measurment called BMI (body mass index) which is&lt;br /&gt;the individual's weight multiplied by 703 and then divided by twice the height in&lt;br /&gt;inches. BMI of 25.9–29 is considered overweight; BMI over 30 is considered&lt;br /&gt;obese. Measurements and comparisons of waist and hip circumference can also&lt;br /&gt;provide some information regarding risk factors associated with weight. The&lt;br /&gt;higher the ratio, the greater the chance for weight-associated complications.&lt;br /&gt;Calipers can be used to measure skin-fold thickness to determine whether tissue is&lt;br /&gt;muscle (lean) or adipose tissue (fat).&lt;br /&gt;Much concern has been generated about the increasing incidence of obesity among&lt;br /&gt;Americans. Some studies have noted an increase from 12% to 18% occurring&lt;br /&gt;between 1991 and 1998. Other studies have actually estimated that a full 50% of&lt;br /&gt;all Americans are overweight. The World Health Organization terms obesity a&lt;br /&gt;worldwide epidemic, and the diseases which can occur due to obesity are&lt;br /&gt;becoming increasingly prevalent.&lt;br /&gt;Excessive weight can result in many serious, potentially life-threatening health&lt;br /&gt;problems, including hypertension, Type II diabetes mellitus (non-insulin&lt;br /&gt;dependent diabetes), increased risk for coronary disease, increased unexplained&lt;br /&gt;heart attack, hyperlipidemia, infertility, and a higher prevalence of colon, prostate,&lt;br /&gt;endometrial, and, possibly, breast cancer. Approximately 300, 000 deaths a year&lt;br /&gt;are attributed to obesity, prompting leaders in public health, such as former&lt;br /&gt;Surgeon General C.
